So when you think of the things in life you want but you can’t have, you probably think of elaborate vacations to Fiji, a walk-in closet in your small apartment, and maybe Tom Brady. Besides all of those things, I also think of apples.
For most people, an apple a day keeps the doctor away, but for me, an apple a day makes for a very uncomfortable Sarah. I have this thing called Oral Allergy Syndrome where my allergic-ness to Birch Trees affects my ability to eat a lot of fruits and veggies. Whenever I eat raw apples, pears, carrots, nectarines, almonds, etc., my mouth gets itchy. It’s kind of hard to explain, but it’s just a really uncomfortable feeling. I don’t worry that my throat will close, because it never goes past my mouth, but it just doesn’t make for a happy me.
The other day on Twitter, a Alana was talking about how she thought she’d be okay eating a few carrots… until she wasn’t. I of course responded, because I always love meeting new people with the same problem. She told me that her allergist told her she could eat an apple if she microwaved it for ten seconds, because that would kill whatever pollen she was allergic to.
I of course, tried it, and it of course didn’t work. I think it was a little better than normal, but still had to take a Benadryl and go to bed.
SO
To solve my craving for apple-ness, I found this apple muffin recipe on Pinterest and am now obsessed with it. While I didn’t make the super healthy original version I found, they still definitely get the job for a good muffin and great apple taste.
Ingredients:
1½ cups all-purpose flour
½ cup quick oats
1/3 cup light-brown sugar, packed
1/3 cup sugar
cinnamon to taste
2 teaspoons baking powder
1/2 teaspoon salt
2/3 cup water
1/2 cup vegetable oil
2 eggs, lightly beaten
1 teaspoon vanilla
1½-2 cups chopped apples
Directions:
– Preheat oven to 400 F
– Mix all of the dry ingredients in one bowl and all of the wet ingredients in a separate bowl. Add all of the ingredients together then add in the apples and stir.
– Spoon the mixture into cupcake tins and bake for 15-20 minutes.
– Eat warm or cool, whatever floats your boat!
