Lemon Pepper Dressing

I make recipes with simple ingredients.

Who are these people who say most of the ingredients are in your pantry? What pantry? I get two shelves in the kitchen I share with my two roommates and a drawer and mini shelf in the fridge.

But today I wanted to cook something fresh and healthy and I did NOT want to go to the grocery store.

So here’s a little salad dressing I made WITH THE INGREDIENTS IN MY TWO SHELVES AND MINI FRIDGE SHELF (not my pantry). You can, too!

I was hungry! So no picture left of the salad or the dressing. But this is what the empty mixing bowl looks like! 🙂

Lemon Pepper Dressing

–          2 tablespoons fresh lemon juice

–          1 tablespoon Dijon mustard

–          2 teaspoons ground black pepper

–          1 teaspoon sugar

–          1/2 teaspoon salt

–          1/2 cup olive oil
Wisk everything together but the olive oil then slowly add it in, continually wisking away.

I served it over some romaine lettuce (used for my daily lunch salads) and cooked some shrimp in it from the freezer and added those over the salad, too.

Not the best ever but a great addition to my back to eating healthy kick (birthday and vacation last week was not so healthy).
