Recipe Swap

As part of last post, I shared that I want to continue to try new recipes that are easy to make and require few expensive ingredients.

A favorite staple:

Moira’s Really Cheesey Mac ‘n’ Cheese (serves A LOT)

Everything tastes good if you add a pound of cheese.

  • 1 box of elbows
  • 1 lb of Land o Lakes American Cheese, sliced and then cut into small squares
  • 1/4 cup of butter
  • 1/4 cup of flour
  • 1 3/4 cup milk
  1. Make elbows.
  2. Melt butter, stir in flour and heat til bubbly
  3. Remove from heat & stir in milk. It will look really weird.
  4. Remove from heat and add cheese.
  5. When melted, mix with cooked elbows in a 13 x 9 pyrex pan.
  6. Bake at 350 until slightly brown on top, I think about a half hour.

 

Lisa’s Walnut & Zucchini Pasta (serves 4)

You heard right, Lisa made this dish first!

  • 3/4 box spaghetti
  • 3 TBL olive oil
  • 1/2 cup walnut halves, roughly chopped (found in the baking aisle, took me forever to figure that out)
  • 4 cloves garlic, thinly sliced
  • 1 1/2 lbs small zucchini (4-5) cut in half moons
  • kosher salt and black pepper
  • Parmesan cheese
  1. Cook pasta, drain & return to pot.
  2. Heat oil in skillet, brown walnuts stirring 3-4 min
  3. Add garlic and stir until beginning to brown (1 min)
  4. Add zucchini and season w 1/2 tsp salt and 1/2 tsp pepper. Cook until tender, tossing occasionally.
  5. Add zucchini to spaghetti. Top with Parmesan cheese.
