Balsamic Vinegar Chicken with Fresh Tomatoes

So this is one of my first recipes in a while NOT in the crock pot.

I know… it’s a big deal.

I found this on Pinterest where the recipe was in the image description, but when I clicked over it was different! Decided to use the original recipe found here.

I would recommend this to anyone looking for a healthy but flavorful chicken dinner- which is many of us.

Ingredients

  • 4 skinless, boneless chicken breasts (I used 3 because 3 come in a package haha)
  • 4-5 garlic cloves
  • 1 cup fresh basil
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic vinegar
  • ¼ cup water
  • 1 cup sliced mushrooms
  • 1 package cherry tomatoes
  • ½ red onion sliced

Recipe:

  1. Preheat oven to 375
  2. Brown your chicken a little on the stove top
  3. In a blender, or if you’re lucky like me, in a magic bullet, blend the garlic, basil, olive oil, vinegar and water until pureed.

  1. In a pyrex, place your chicken and cover it with the green mixture you blended together. I tried to put some on either side to keep it flavorful on every side.
  2. Top the chicken with mushrooms, tomatoes and onions.
  3. Bake for about 40 minutes, checking to make sure the chicken is fully cooked.

I served mine over brown rice for an all-around healthy and satisfying meal. Does it get much easier than that?
